Butter Coconut Twinkaaays


am low-brow at heart and can’t deny that this spongey gift to the world isn’t one of my favorite things. I put a little twist on this classic and made an easy little recipe. You don’t even have to make those tedious foil molds! By all means, you can, but I was really frustrated real fast when I tried it. Make these for your friends and they’ll think it’s adorable that you 1. Went to these lengths to duplicate this snack cake 2. Your inner child is alive and well 🤣


Ingredients:

Box of Duncan Hines White Cake Mix

1/2 Cup of water

3 large egg whites (reserve yolks for pasta sauce ;)

1/3 cup of vegetable oil

1/4 Cup lime juice (cuts the “box mix cake” flavor that’s distinct)

Preheat oven to 350.

Mix all ingredients together. Spray and lay parchment in a 9x9 square cake pan. Fill with batter and bake for 35 mins or until inserted knife is clean

Let cake cook completely. Once cooled, cut into rectangles.


Fluffy filling

Whip on high speed or with whisk:

6 TBSP softened butter

1 jar of marshmallow fluff

1 cup of powdered sugar

3-4 drops of coconut extract

2 TBSP heavy cream


Fill a piping bag fitted with star tip with marshmallow filling. Insert directly into cake and fill. Repeat in line down center of each rectangle and serve.
