Thick and Chewy M&M Chocolate Chip Cookie Bars
I wish I got a better photo of these. Just a fun back to school treat for you. Enjoy!
Yield: 9x13 Pan, cut into 18 thick squares
Ingredients
1 cup (2 sticks) unsalted butter, melted and slightly cooled
1 1/4 cups light brown sugar, packed
1/2 cup granulated sugar
2 large eggs
2 tsp vanilla extrac
1/2 tsp salt
1 tsp baking soda
2 1/2 cups all-purpose flour
3/4 cup semi-sweet chocolate chips
1 1/4 cups mini M&Ms, plus a handful for topping
1. Preheat oven to 350°F (175°C). Line a 9x13-inch pan with parchment paper, leaving a bit of overhang for easy removal. Lightly spray or butter the parchment.
2. Melt the butter in a microwave-safe bowl, then let it cool for 5–10 minutes (so it doesn’t scramble the eggs).
3. In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth and creamy.
4. Add in the eggs and vanilla extract,whisking until well combined.
5. Sprinkle in the **salt and baking soda, stir briefly, then fold in the flour. Mix until just combined — don’t overmix!
6. Fold in the chocolate chips and 1 1/4 cups of M&Ms
7. Spread the dough evenly into the prepared pan — it will be thick, so use a spatula or clean hands to press it into the corners.
8. Press a few extra M\&Ms on top for that bakery-style look.
9. Bake for 25–30 minutes, until the edges are golden and a toothpick inserted into the center comes out with just a few moist crumbs. Don’t overbake — the bars will set as they cool.
10. Cool completely in the pan on a wire rack before slicing into squares or rectangles.
